According to the UN, 1.9 million people have been forcibly displaced in Gaza by Israel's military operations. The conditions for Palestinian refugees are deplorable, people live under constant bombardment and fear in crowded tent encampments. Food and water are scarce. Famine and disease is prevalent.
40,319 Palestinians have been killed since October 7, 2023. But Israel's war on Palestine has been happening for decades, since 1948. Israel is a settler-colonial state that seeks to ethnically cleanse the indigenous peoples of Palestine and steal their land - proof is right in front of our eyes with their ongoing genocide. Before October 7, Israel had forced Palestinians to live in apartheid. Access to food, water, necessities, and basic materials were limited or denied to Palestinians - items such as toys, newspapers, notebooks, fishing nets, spices and sweets were banned. Israel made chocolate illegal to Palestinians, and culturally important spices like zaatar and thyme were forbidden to them.
So I made this cookie to honor the Palestinians and their plight for freedom. Chocolate because it was denied to them for so long. Ancient and heirloom wheat & semolina flours make up this cookie. Significant spices such as cardamon, cinnamon, and mace lightly spice and sweeten it, with dried dates, cherries, golden raisins, pistachios, almonds, and sesame seeds - all play a significant role in Palestinian cuisine, and provide the cookie with flavor and texture.
The Palestinians are a people of their land, going back several centuries; historically people of many differing religions lived peacefully together. Palestinian farmers take care of thousand year old olive trees, and vast orchards of fruit or nut trees grace the fertile lands. We must protect Palestine, its people and their right to their homeland. Their customs, traditions, and recipes must be preserved. From the river to the sea, Palestine will be free.
Proceeds will be donated to displaced humans in Gaza, Palestine and to the Gaza Medical Tent, a group of volunteer doctors from Gaza offering free health services for Gazan refugees in Rafah including pregnant women and children
